Winter is coming! And I wanted to share with you a Hot Cocoa Mix that I just started making once I found a package of dried coconut milk at the store! It’s perfect to keep in the pantry for cold nights. I love hot cocoa and to be able to make my own vegan AND soy-free version is great!
I know that powdered coconut milk might be hard to find so I have this mix two way – with or without coconut milk.
NOTE: It will keep in the pantry all winter, up to 6 months.
Hot Cocoa Mix
- 3 cups powdered sugar
- 1 1/2 cups cocoa powder
- 3 cups powdered coconut milk, optional
- 1 tbsp salt
- Seasonings: ground cinnamon, cayenne powder, chipotle chili powder (optional)
- WITH POWDERED COCONUT MILK: Sift all ingredients into a bowl and mix together. Store in an air tight container. If you don’t have a sifter and there are clumps you can put it in a blender to break it up. Just use it for a few minutes and you might need a spoon to break up the bottom. When ready to use, it is a 1 to 1 ratio. This recipe make 14 servings using 1/2 cup mix with 1/2 cup water.
- WITHOUT POWDERED COCONUT MILK: Sift all ingredients into a bowl and mix together. Store in an air tight container. When ready to use take 1 cup hot plant-based milk and 1 – 1 1/2 tablespoons of the mix and whisk together.
