This recipe is great as a stand alone side dish, but it will be linked to my Shrimp/Hearts of Palm Tacos that I’ll be posting soon!
Most coleslaw recipe uses green cabbage, but purple cabbage is pretty! Oh, and it more nutrient dense then green cabbage.
- 1/2 head of purple cabbage, shredded
- 1 c shredded carrots
- 1/2 c cilantro
- 1 clove garlic
- juice of 1 orange (1/4 – 1/2 c)
- 1/4 c lime juice
- 1 tbsp agave
- 1 tsp cumin
- 1 tbsp olive oil
- S & P
- Add cabbage, carrots, cilantro, and garlic to medium mixing bowl. In a cup mix together dressing – orange juice, lime juice, agave, cumin, and olive oil.
- Add dressing to coleslaw and mix together. Add S & P to taste.
