Kale with Avocado and Lemon Juice

This is one of my go-to salads. Something I always have the ingredients to, and something I can throw together in a hurry. It’s simple, it’s fresh, and it’s filling. Great for busy days!

Kale with Avocado and Lemon Juice

  • Servings: 1-2

The crunch of the kale, the creaminess of the avocado and the tartness of the lemon are a perfect combo.


  • 2-4 leaves washed kale
  • 1/2 avocado
  • juice from 1/2 lemon or 2 tsp lemon juice
  • Optional: Red onion
  • S & P


  1. Tear kale leaves, if not already chopped, into your salad bowl. I usually just use the leaves and leave the stems out. Add 1/2 avocado.
  2. With your hands, smash the avocado into the kale. Don’t be afraid to get rough with the kale, it’s tough and it can take it! It will be easier to eat once the avocado smashed into it. This is basically going to be your dressing, so make sure it’s everywhere.
  3. Squeeze the lemon juice over the salad, sprinkle with S & P if you want it, and enjoy!
