Coconut Bacon

Coconut Bacon

  • Servings: Makes 1 Cups
  • Print

Great for topping salads giving it a crunch and a salty flavor. And of course for baked potatoes and cheese fries. I can't say it's a good thing once you learn how to make this. It's a little too easy.

  • 1 c coconut flakes (not shredded!)
  • olive oil
  • soy sauce (few tbsp)
  • dash liquid smoke

I have heard of an all natural liquid smoke, but I can’t find it readily at the stores I’ve been to.

  1. Take the coconut flakes and add to a heated skillet with a small amount of olive oil and start to toast. The coconut shreds have oil in them, so just a small amount of olive oil to start is all you need.
  2. Add enough soy sauce to coat the coconut shreds and turn them brown (a few tbsp), and then add a dash of liquid smoke to give it that smoky flavor/smell. Toast in the skillet while stirring continuously. The sugar coming off of the coconut shreds will make it stick and burn if you don’t keep stirring.
  3. Once it’s toasted to your liking, turn off heat and set aside ready to use!
