I love Caesar Salad but it can feel heavy sometimes. I was so grateful to know how I could make it at home, that it could be plant-based, and it didn’t leave me feeling heavy and gross. No salad should do that! This is a recipe that James and I both love and since he is lactose-intolerant, he’s also grateful for the plant-based version. You won’t miss anything with the recipe below!
Caesar Salad with Whole Wheat Croutons
Perfect to complete any Italian meal, or to have as dinner in the summer with chicken or roasted chickpeas. One of our favorites!
Optional: To make it a meal you can add Roasted Garbanzo Beans / Roasted Chicken Breast
- Chop red onion and add to the salad bowl with the hearts of romaine.
- Add Caesar dressing and toss together.
- Add your toppings – croutons, parm, and beans or chicken if making it a full meal.
- Add S & P if needed, enjoy!
