Caesar Salad with Whole Wheat Croutons

I love Caesar Salad but it can feel heavy sometimes. I was so grateful to know how I could make it at home, that it could be plant-based, and it didn’t leave me feeling heavy and gross. No salad should do that! This is a recipe that James and I both love and since he is lactose-intolerant, he’s also grateful for the plant-based version. You won’t miss anything with the recipe below!

Caesar Salad with Whole Wheat Croutons

  • Servings: 2 Main Courses, 4 Side Dishes
  • Time: 15 - 30 minutes

Perfect to complete any Italian meal, or to have as dinner in the summer with chicken or roasted chickpeas. One of our favorites!

Ingredients


Optional: To make it a meal you can add Roasted Garbanzo Beans / Roasted Chicken Breast

Directions

  1. Chop red onion and add to the salad bowl with the hearts of romaine.
  2. Add Caesar dressing and toss together.
  3. Add your toppings – croutons, parm, and beans or chicken if making it a full meal.
  4. Add S & P if needed, enjoy!
