I love black beans. Almost as much as chickpeas…almost. This is just a quick black bean salad you can make as a side, appetizer, make for lunch, whatever you want it to be. Great for hot days.
Black Bean Salad
- 1 15oz can black beans, drained and rinsed OR 1 1/2 c cooked
- 1/4 red onion, diced
- 1/2 red bell pepper, diced
- juice from 1 lime
- 1/2 c cilantro
- S & P
- Add all ingredients, add S & P to taste, and enjoy!
