This goes on top of my Shrimp / Hearts of Palm Tacos, but it can be a topping or dressing to any salad or side. It's so creamy without using any oil!
- 1 Avocado
- 1/4 c cashews, soaked about 20 minutes
- 1 tsp ACV (apple cider vinegar) – 2 tsp lime juice
- 1 small garlic clove
- 1/4 c water (more if needed)
- 1/2 tsp salt
- Blend all ingredients together until smooth. May need to add a little more water.
